Pressure cook whole potatoes with salt for 10 minutes on a medium heat. Potatoes should be cooked until a knife pierces easily. Let it cool for 10 minutes. Crush each potatoes with a back of spatula. Arrange potatoes on a baking tray.
Season the potatoes with the cayenne pepper.ground paprika garlic and pepper seasoning and salt.
Drizzle vegetable oil on each potato. Grill first on one side for 15 to 20 minutes and flip halfway through until golden brown and crisp for another 15 to 20 minutes. When it is done add some shredded cheese and bake for a minute or two until cheese starts to melt. Meanwhile, mix sour cream,shredded cheese,onion,tomato and coriander together and sprinkle Peri Peri seasoning according to taste.
Top each potato with 1 to 2 teaspoon full of sour cream Dip and garnish some more onion,tomato and coriander leaves while serving.
